Gas liquid chromatography was used to study variation in the content of ordinary sugars and polysaccharides (starch, hemicellulose, pectins, cellular tissue) in cabbage, carrot, beef, and onion during culinary treatment (cooking). It was shown that cooking of vegetables leads, apart from extraction
